With Pancake Day just around the corner (Tuesday 28th February 2017), of course I had to bring you guys a foodie blog post. I love pancakes and I also love white chocolate, so I combined the two and came up with this recipe. Hope you enjoy it as much as I do!
This recipe makes up to 10 small pancakes.
Prep time 15 mins; cooking time 15 mins.
Ingredients:
To make the pancake batter:
- Plain flour (1 cup)
- Sugar (2 tablespoons)
- Baking powder (2 teaspoons)
- Salt (1 teaspoon)
- Egg, beaten (1)
- Milk (1 cup)
- Butter, melted (2 tablespoons)
- Vanilla flavouring (1/2 bottle cap)
- White chocolate, melted (5 squares)
- White chocolate, crushed (5 squares)
To decorate the pancakes/serving suggestion:
- Banana, sliced (1)
- Ice cream (3 scoops!)
- Syrup (whatever floats your boat)
Method:
Wet ingredients: mix together the milk, melted butter, vanilla flavouring and beaten egg in a bowl.
Dry ingredients: in another bowl, mix together the flour, sugar, baking powder and salt.
Next, combine the wet ingredients mix with the dry ingredients mix and whisk together until smooth.
Now for the fun part! Add the melted white chocolate to the mix and stir well. Then for an extra chocolatey taste, crush another 5 squares of white chocolate into small pieces and add to the mix. (Alternatively, you can use ¼ cup of white chocolate chips). Make sure that the white chocolate pieces are properly folded into the mix.
Time to cook. Grease your frying pan (with butter or oil) and pour the batter onto the pan using a ladle. Cook each pancake for 1-2 minutes on a low to medium heat. Tip: when the batter starts to bubble, it’s usually time to flip the pancake. Don’t worry if the first pancake messes up, that’s very normal lol.
Serving suggestion:
I decided to serve my pancakes with 3 scoops of toffee and vanilla ice cream, a few banana slices and topped it off with golden syrup. Yum! *Cue lots of mouthwatering pictures of the finished pancakes*

White chocolate and pancakes are such a heavenly combination! I usually make a white chocolate sauce, but I might have to try this next time. They look so tasty! 🙂

Usually I throw in a big bar of white chocolate, double cream and stir in a few chunks of butter! Its so tasty!
